A wooden shophouse on the walking street — tables on the street, a terrace under the red V, the window, the counter, sofas upstairs and a balcony for when the fog comes in. Pick yours.

A roof over you, the glass behind you, the street a step away. Round tables, a sprig of rosemary, and a lamp on each once the sun goes.

The calmest tables in the house, with the walking street framed in the glass doors. Wine along the wall beside you, the counter a few steps away.

Stools at the bar, glasses overhead, the shaker an arm's length away. Sit here if you'd like to talk to whoever is making your drink.

Low sofas in the wooden room, lamps on the tables, and a long table when it's a party of friends. Quiet early, warmer once the music starts.

Small round tables under the wooden shutters, each with its own lamp, and the lit wine cabinet in the corner to choose from. The singer sets up here.

A rail, a lamp and the whole walking street below you. The seats worth coming early for.

Lit letters under a single line, on dark timber above the walking street — and the red V on the front terrace, so you can spot us from down the street.
Tables on the street, lamps lit, the red V over the door and the market going by. Take a seat outside and watch Pai walk past.

Every glass is poured at your table, into a carafe with a brass mark. Not a splash under. Not a guess. It is the one promise this place is built on — and the line under our name is the same line.
Old World and New — by the glass at the window, by the bottle at the table.

Every cocktail is built the long way — measured with a jigger, shaken or stirred by hand, strained and finished in front of you. Wine is opened at the counter and poured to the line. Not the cheapest glass on the walking street; the one made by someone who knows what they're doing. Sammy is still behind this counter — take a seat where you can watch.

Doors open as the walking street lights up. The music follows the room — slow while the first glasses go down, louder when the room is ready, and quiet again before we close on time, with respect for the neighbours.

Aperitivo light. Vermut on ice, olives, the first pour of the night.

Glasses by the window, plates to share, the street going by.

Cocktails, the upstairs tables, songs people know.

One more, then we close at midnight — on time, every night.
Some nights there's a singer in the corner, playing to the room — close enough to request one.

Cheese and cold cuts, sausages off the grill, rosemary potatoes, olives — plates for the middle of the table. Priced as on the menu tonight.

Japanese Sausages with fresh tomato, Japanese cucumber, carrot & garlic aioli

Black & Green Olives, Sun-dried Tomatoes, Artichoke Hearts

Come as two, come as six, or come on your own with a book — there's a seat for it.

Pick something up from the stalls on the walking street and bring it to your table. The board games are on the shelf — free to borrow while you're here. And yes, your dog is welcome too.

Dogs are welcome — at the tables out front and inside. The regulars at the door already know the way in.
From the German Wermut, wormwood. A bitter herb, steeped in wine, that gave the wine its name.
It took us a long time to name this place. We picked a few names and threw them all away.
Our problem was that we wanted to open early. Breakfast, coffee. But by late morning someone always wants a glass of wine, and here you cannot pour one until eleven. We spent a while being annoyed by that rule. Then we found out the Spanish already have a name for exactly that hour. They call it la hora del vermut. The vermouth hour.
Over there, on a day off, before lunch, people sit down together, order one cold vermut and a small plate of olives, and talk. Nobody is drinking to get drunk. It is just how the neighborhood says hello. They have been doing it for a hundred years.
The word itself is not something clever we invented. It is the name of a plant, from the German Wermut, wormwood, a bitter herb that grows on dry ground. Before refrigeration people steeped it in wine to preserve it and to use it as medicine. The wine took the name of the herb.
The man who turned it into a business was Carpano, in Turin, in 1786. Turin is also a city where cafés have long served coffee in the morning and something stronger at night. Once we knew that, we stopped pretending we had invented anything. We just moved something a city has been doing for 240 years onto a walking street in Pai.
Here the vermouth hour is 11:00 to 14:00. You do not have to wait for dark.
That is the Turin story. Here the doors open at 17:00, every day — there is no breakfast or daytime service.
